1979年11月6日出生于中国香港，香港女演员、歌手。1999年，胡杏儿参加香港小姐竞选获得季军后而签约香港电视广播有限公司出道。
2002年，凭借电视剧《流金岁月》中丁善茵一角夺得TVB万千星辉颁奖典礼飞跃进步女艺人奖。2005年主演《我的野蛮奶奶》夺得Astro华丽台电视剧大奖我的至爱女主角奖。2007年凭借《肥田囍事》夺得第十二届亚洲电视大奖最佳喜剧女演员奖。2011年，分别凭借《怒火街头》和《万凰之王》夺得万千星辉颁奖典礼“最佳女主角”奖“、我最喜爱的电视女角色奖”、“非凡风采女艺员”奖，成为TVB首位同时获得三项奖项的女演员。2012年荣获第七届华鼎奖中国最佳电视剧女演员奖。
2008年签约唱片公司，同年发行首张专辑《Evolve》，夺得十大劲歌金曲最有前途新人奖、叱咤乐坛流行榜“叱咤乐坛生力军女歌手银奖”、十大中文金曲“最有前途新人优异奖” 。2009年，首次在香港举行个人音乐会。
